I used to work down the street from a little deli that had these big sloppy hoagie rolls piled with the caramelized peppers and onions and the best Italian fennel sausage this side of the Mississippi. Sadly they closed many years ago. But, we don’t live all that far from The Hill in St. Louis, Missouri, which has some of the best Italian restaurants in the country, actually more than Little Italy in New York (We’ve had good food there as well). 

This recipe is so easy to make at home, and if you’d rather use a turkey or chicken sausage you can swap that out, but I highly recommend a good Italian Fennel sausage from a reputable butcher shop.
